My family loves pot roast. It’s such a yummy filling comfort food. Since I stay home with our four kids, slow cooker recipes that I can start in the morning and forget about the rest of the day make dinner easy. Our favorite keto slow cooker recipe has always been a delicious and easy pot roast. When we started eating keto, I decided to adapt the traditional Mississippi Pot Roast to make it more keto-friendly. WHY IS IT CALLED MISSISSIPPI-STYLE POT ROAST?

According to Google, the original recipe came out of Ripley, Mississippi, in the 1990s by Robin Chapman, who was looking to make a recipe her aunt made milder. HOW IS THE MISSISSIPPI POST-ROAST DIFFERENT THAN REGULAR POT ROAST?

This Keto Mississippi Pot Roast Recipe is naturally low carb as there are no potatoes and carrots. The stars of the show that set it apart from the rest are a stick of butter, ranch dressing mix, and pepperoncini peppers. The traditional recipe also calls for a packet of gravy mix, but I omitted that for a keto version. If you are strict keto and prefer not to use a packet of ranch dressing mix, there are lots of recipes on Pinterest for homemade ranch dressing mix.

IS KETO MISSISSIPPI POT ROAST SPICY?

No! I am a total wimp when it comes to spicy foods. This recipe is mild. My toddlers even love it.

IS IT NECESSARY TO SEAR THE POT ROAST BEFORE SLOW COOKING?

I used to sear the roast first in a cast iron skillet but skipped the step once due to time constraints, and I could not tell the difference at all. The roast was still every bit as flavorful and tender, so now I don’t bother with searing it anymore. It saves time, and there is less mess in my kitchen.

HOW LONG TO COOK CROCK-POT ROAST RECIPE?

Although sometimes cooking times can vary depending on the size and shape of the roast, generally, you will cook on high for 4-5 hours or low for 9-10 hours. If you find that the pot roast in the Crock-Pot isn’t fork tender after the allotted cooking time, it needs to cook longer. Go ahead andshred the roast if it is tender enough to shred, then continue to slow cook on high for another hour or so. If it isn’t tender enough to shred, continue slow cooking for at least an hour on high without removing the lid. This Mississippi Pot Roast Keto Recipe is so easy to make; you simply dump all the ingredients in the slow cooker, add a stick of butter on top, turn it on, then forget about it until it’s ready. It reminds me of Sunday lunch at my grandmother’s house when I was a child, which feels like comfort food.

WHAT IS THE BEST CUT OF BEEF FOR A POT ROAST?

I was surprised to find that a tougher cut of beef with lots of marbling makes a better roast when making a recipe for a roast in the Crock-Pot. For the most tender meat, choose one of the roasts listed below.

  1. Chuck Roast (highly marbled with a lot of fat) – also labeled Shoulder Roast, Blade Roast, Chuck Shoulder, Severn Bone Roast
  2. Bottom Round Roast (leaner than chuck roast) – Roast Rump Roast or London Broil
  3. Beef Brisket (lots of fat) – comes with a much heftier price tag than either of the others and is usually BBQed or smoked

HOW TO SHRED POT ROAST?

I used two forks to shred the pot roast in the Crock-Pot by placing the forks back to back in the roast adjacent to each other with the tips in the meat. Then, pull the forks in the opposite direction to shred the pot roast. I pull out large pieces of fat as I shred and discard.

HOW TO THICKEN THE GRAVY?

Most who follow a keto or low carb recipe avoid corn starch and regular flours, which are often used to thicken gravy in pot roasts. A keto-friendly alternative is Xanthan Gum. Only use a small amount and let it sit on the food for five to ten minutes to give it time to thicken. I always start with 1/4 to 1/2 tsp to start, then add more if needed. If you use too much, the food will have a slimy texture.

HOW TO STORE THIS RECIPE:
