Hawaiian Quesadillas - Recipe Diaries (1)

This Hawaiian Quesadilla uses a fresh pineapple salsa and leftover diced ham with gooey cheese. Serve it with some more fresh salsa on the side for dipping. It can be cooked on a nonstick skillet or on a griddle.

This quesadilla is so easy and great for leftovers after Easter or any big Holiday that uses ham as the main dish. it really doesn't even need a recipe. Just take one 8 inch flour tortilla, spray a nonstick pan with cooking spray, and lay the tortilla down on there. Next, cut up some diced ham, take out some pineapple salsa (can be store-bought), and lay on the cheese. Wait until the flour tortilla is golden brown and the cheese has melted. Takes less than 10 minutes to prepare. I used Whole Foods pineapple salsa. This is so good and tasty, I've made these Hawaiian quesadillas three times now this week.

If you have an air fryer you can even cook it in there. I've made quesadillas with it before.

What Ingredients do I need?

Flour Tortillas - My favorite flour tortilla is the Mission Carb Balance Tortillas. They are low carb and still taste like a pretty decent tortilla.

Ham - cooked and diced

Pineapple Salsa I used pineapple salsa from Whole Foods but you can make your own if you wish.Mango salsa would also be good. Now is the time to take advantage of those fruit salsas that Sam's and Costco sell.

Cheese - Colby Jack, Pepper Jack, or Monterey Jack cheese

Toppings: Chopped fresh chives or chopped bacon (optional)

Turn the burner on to medium high heat.

Spray a non stick skillet with cooking spray..

Place the tortilla over on the skillet. On one side of the tortilla lay the diced ham, 2 tablespoons of pineapple salsa, and cheese on top. Scallions are optional if you want them inside. Fold the other side down and cook the tortilla on each side until the outside is golden brown and the cheese has melted.

Serve with fat free ranch dressing if desired.

Serving size: 1 quesadilla

  • 3 oz of ham, cooked and diced
  • 2 tablespoons of pineapple salsa
  • scallions (optional)
  • 1 oz shredded monterey jack cheese (lite)
  • Cooking Spray

    You can use up to 4 tablespoons of pineapple salsa since it is 0 points. Once you hit 5 it turns into 1. 😉

    Did you add extra pineapple. The picture looks like a lot of pineapple to just be 2 tbs of pineapple salsa. Also, if I don't have pineapple salsa what would I add to the pineapple to make this taste similar?
