Ragi Idli Recipe | Instant Raagi Idli Recipe | Finger Millet Idli Recipe with step-by-step photo and video recipe. Ragi is a staple food of Karnataka and the largest cultivation with around 58% share. Like any other traditional idli recipe, even this idli is prepared with just 3 main ingredients: semolina, raagi, and curd. It also needs baking soda, as it helps idli to make it extra fluffy and soft or hasten the fermentation process.

Honestly, I am not a big fan of ragi recipes. However, my mom prepares a variety of ragi recipes as my grandma is diabetic. Ragi is a very good source of proteins and minerals. Also, they help in controlling diabetes and cancer, in addition to supplying all the required supplements and nutrients. So once in a week, without fail, my mother makes sure to prepare ragi dosa, ragi rotti, and Ragi Mudde and serve it to the whole family. However, I started to prepare recipes from finger millet as my husband likes to have a healthy morning weekday breakfast. Moreover, this recipe does not require any soaking, grinding, or fermentation process, so it has become a tradition to make it one in a week.

Furthermore, I would like to highlight some key suggestions, tips, and variations for perfectly soft and spongy ragi idli recipes. Firstly, use sour curd to soak rava and ragi flour to form thick and flowing idli batter. Using sour curd helps to make idli soft and spongy like traditional fermented idlis. Secondly, make sure to roast the rava well before it is used in the idli batter. Otherwise, the idli may turn sticky and stiff. Also, add baking soda just before steaming. Otherwise, the idlis will not be spongy. Lastly, you can also prepare the idlis by without adding tempering to the batter. You can skip mustard seeds, green chilli, ginger, and carrot and make with just ragi and rava flour.

About Ragi Idli

It is a popular healthy South Indian Breakfast recipe made with 3 basic ingredients, i.e. Ragi, Rava, and Sour Yogurt. In other words, Ragi Idli Recipe is an instant breakfast recipe that can be made without much planning and preparation. Traditionally, idlis are made with rice and urad dal. These 2 ingredients need to be soaked, ground to flowing batter, fermented, and then steam-cooked. Whereas, these instant ragi idli, skips all overnight preparation and directly jumps to steam cooking.

Yet Ragi Idli can also be made with the traditional recipe with ragi and urad dal ground to batter. This is later fermented for a soft and spongy idlis. However, the traditional ragi idli can be less tasty as compared to the Instant version. Yet, the instant recipe does contain rava which has carbohydrates in it. Hence, it can be a concern for diabetic patients when consumed in excess.

Benefits of Ragi Idli

We all know the benefits of millet and the inclusion of it in our diet. Yet to name a few key benefits are

  1. High Fiber – All millets, including ragi flour are high in fiber content which makes it an ideal digestible ingredient. This helps with constipation, proper bowel movements, and a healthy gut system.
  2. Nutrient Rich – Ragi Flour is loaded with all the essential nutrients like minerals, vitamins, iron, and calcium. Thus helping in improving heart health, bones, blood levels, and liver.
  3. Blood Sugar Levels – Compared to all the other grains and cereals used in Indian cuisine, Ragi contains lower levels of glycemic index. Hence it is beneficial for diabetic patients and also for regulating blood sugar levels.
  4. Weight Loss – Due to the high source of fiber content in ragi millet, it makes you feel more filling with less amount of ragi intake. Thus helping in weight loss with the reduced amount of calorie intake.

Ingredients

  • 2 tbsp oil
  • 1 tsp mustard
  • 1 tsp chana dal
  • 1 tsp urad dal
  • 1 tsp cumin
  • pinch hing
  • 2 tbsp cashew, chopped
  • 2 tbsp carrot, grated
  • 2 chilli, chopped
  • 1 tsp ginger paste
  • few curry leaves
  • 1 cup rava, coarse
  • 1 cup ragi flour
  • 1 tsp salt
  • 1 cup curd
  • 2 tbsp coriander, chopped
  • 1 cup water
  • 1 tsp eno fruit salt

Instructions

  • Firstly, in a pan heat2 tbsp oil. add1 tsp mustard, 1 tsp chana dal, 1 tsp urad dal, 1 tsp cumin, pinch hing and 2 tbsp cashew.

  • Fry on low flame until the cashew turn golden brown.

  • Now add 2 tbsp carrot, 2 chilli,1 tsp ginger paste and a few curry leaves.

  • Saute slightly until it turns aromatic.

  • Further, add 1 cup rava and roast for 2 minutes. Roast until the rava turns aromatic.

  • Add 1 cup ragi flour and roast for 1 minute.

  • Cool completely, and transfer to a large bowl.

  • Add 1 tsp salt, 1 cup curd and 2 tbsp coriander.

  • Mix well making sure everything is well combined.

  • Furthermore, add 1 cup water and mix well adjusting the consistency.

  • Cover and rest for 20 minutes, for rava and ragi flour to soak well.

  • Now add 1 tsp eno fruit salt and 2 tbsp water, and mix gently till the batter turns frothy.

  • Pour the idli batter into the greased idli moulds.

  • Steam for 15 minutes, or until the toothpick inserted comes out clean.

  • Finally, enjoy Ragi Idli Recipe with chutney.
